Grilled Corn and Avocado Salad with Dark Red Kidney Beans
ingredients
6 ears of corn |
2 tbsp cider vinegar |
1 - 15 oz can dark red kidney beans, rinsed and drained |
1 pint cherry tomatoes, halved |
2 firm-ripe avocados, peeled and diced |
3 oz feta cheese, crumbled |
Directions
Brush corn with olive oil and grill (outdoors or in a grill pan) over medium heat for about 10 minutes, until lightly browned on all sides. Remove kernels from cobs with a sharp knife. (about 3 to 3 1/2 cups of corn) Meanwhile, in a large bowl, whisk 2 T olive oil, vinegar, 1 t salt and 1/2 t freshly ground pepper. Add corn, dark red kidney beans, tomatoes, avocado, cheese, and toss gently. Serve with a few baby greens, if desired.
