Chilly Chili Salad
For The Salad
1-15 oz can light red kidney beans, drained |
2 celery stalks, coarsely diced |
3/4 cup cooked roast beef, coarsely diced |
1/4 cup mayonnaise |
1 garlic clove, minced |
Salt and pepper, to taste |
1 green onion, sliced |
1/2 tsp chili powder |
2 tbsp vinegar |
Directions
To prepare salad, combine beans, celery, and meat; set aside. To prepare dressing, place mayonnaise, onion, garlic, chili powder, salt, and pepper in small bowl. Add vinegar and stir until well blended. Pour over bean mixture. Gently toss to coat. Cover and refrigerate 2 hours for flavors to blend. Serve on lettuce or crisp tortillas. Makes 2 to 3 servings.
