Ben's Hot Dog Soup
ingredients
1 Tbsp Olive Oil |
1 Onion, diced |
2 Garlic Cloves, minced or pressed |
1/4 tsp. Aleppo pepper or red-pepper flakes |
2 lbs yellow potatoes, peeled and cut into 1/2" chunks |
2 Carrots, peeled and cut into small pices |
1 qt. Broth (beef, chicken, or vegetable) |
1 - 15.5 oz Can Red Kidney Beans or Cannellini Beans, drained |
2 Cups Kale, fresh or frozen, cut into bite size pieces (no stems) |
3 or 4 Hot Dogs, cut into bite size pieces (see note in directions) |
Salt and pepper to taste |
Directions
In a large (6-8 qt) pan, saute’ onion in oil until softened, stirring and making sure that the onion does not burn. Add garlic and pepper flakes; cook until fragrant (about a minute). Add potatoes, carrots, broth, and enough water (if needed) so potatoes are covered. Bring to a boil, reduce heat, and simmer until potatoes are tender (20 mins or so). Using a blender or immersion blender, puree a cup or two of the soup. The soup should have a creamy consistency but still have texture. Add beans, kale and hot dogs.
Important note: Hotdogs are a choking hazard for young children. Hotdogs should be cut lengthwise before cutting in pieces. Skinless hotdogs are best for children.
