Bean Tarts
ingredients
1 cup dark red kidney bean puree |
1/4 cup light corn syrup |
2 eggs |
1 tsp vanilla extract |
1/4 cup butter |
1/2 tsp ground nutmeg |
1 cup packed brown sugar |

24 3-inch tart shells |
Directions
Puree
1-15.5 oz. can Dark Red Kidney beans, drained, reserving 3 tablespoons liquid. Put bean and reserved liquid in blender or food processor. Blend or process until smooth. Recipe makes about 1 cup of puree. Beat eggs; add to bean puree. Add the next 5 ingredients and beat well. Place a few currants in each shell. Pour in the filling. Bake at 350 degrees for 20 minutes or until nicely brown. (Variations: Maple flavoring can be substituted for vanilla extract, and pecans or walnuts for currants.)
