Mediterranean Bean and Corn Cabbage Slaw
ingredients
1 - 15 oz can dark red kidney beans, rinsed and drained |
1 cup frozen corn |
1/2 tbsp fresh lemon juice |
1 bag pre-shredded cabbage for coleslaw |
1/2 cup chopped red onion |
1/2 cup chopped green bell pepper |
1/2 tsp kosher salt |
1/2 cup Brianna's Blush Wine Vinaigrette dressing |
Directions
In large bowl, combine kidney beans, corn and lemon juice. Add cabbage mixture, onion, green bell pepper and salt. Pour vinaigrette over cabbage mixture; toss gently. Cover and refrigerate for 1 to 2 hours. Toss gently before serving.
Amount: 5-6 servings
Note: if Blush Wine Vinaigrette Dressing isn’t available, use a strawberry or raspberry vinaigrette.
