ingredients
2 cups packed brown sugar |
1 cup dark red kidney bean puree |
1/2 cup butter, melted |
1 tbsp vanilla extract |
1 - 10 inch unbaked pie shell |
4 eggs, beaten |
Whipped cream or vanilla ice cream |
Directions
Puree: 1-15.5 oz. can Dark Red Kidney beans, drained, reserving 3 tablespoons liquid. Put beans and reserved liquid in blender or food processor. Blend or process until smooth. Recipe makes about 1 cup of puree.
In a mixing bowl, beat together the sugar, butter, vanilla and eggs. Stir in the bean puree. Pour into pie shell. Bake at 350 degrees for 45-50 minutes or until a knife inserted in the center comes out clean. Serve warm or chilled with the whipped cream or ice cream.
