ingredients
9 lasagna noodles |
1 tsp canola oil |
1 large onion, chopped |
2 tblp minced fresh cilantro |
2 - 15 oz cans dark red kidney beans |
1 - 14 oz can diced tomatoes, rinsed and drained |
1 - 6 oz tomato paste |
1 can tomato sauce |
1/4 tsp black pepper |
1/2 tsp salt |
4 egg whites, beaten |
1 - 15 oz carton ricotta cheese |
1/2 cup grated parmesan cheese |
2 cups shredded Mexican cheese blend |
Directions
Cook noodles, meanwhile in a large skillet over medium heat, cook onion in oil until tender. Add beans, tomatoes, tomato paste, cilantro, pepper, and seasoned salt. Bring to boil. Reduce heat and simmer uncovered. Combine egg whites and cheeses. Drain noodles. Spread ½ C bean mixture into 13x9 pan coated with cooking spray or oil. Layer with 3 noodles then bean mixture, then cheese mixture. Repeat layers twice. Cover and bake at 350 degrees for 30-35 min, uncover then bake another 10-15 min. let stand 10 minutes before serving.
