ingredients
1 large onion, finely chopped |
1 large garlic clove, minced |
3 - 1/2 cups chicken broth, divided |
1 large carrot, diced |
1 large celery stalk, diced |
1/2 sweet green pepper, diced |
1 - 15oz. can tomato sauce |
2 - 15oz. cans dark red kidney beans |
1/4 teaspoon (generous) dried thyme leaves |
1 bay leaf |
1/4 teaspoon black pepper |
1/3 cup long grain white rice |
6oz. smoked turkey sausage, cut into 1/4 in slices |
Tobasco sauce, to taste |
1 teaspoon olive oil |
1/8 teaspoon cayenne pepper |
Directions
In a Dutch oven or small soup pot, combine onion, garlic, and 3 tablespoons chicken broth. Cook over medium heat, stirring frequently, until onions begin to brown, about 5 to 6 minutes. Add all remaining ingredients except sausage and rice. Bring soup to a boil over high heat. Lower heat, cover, and simmer, stirring occasionally, about 20 minutes. Add sausage and rice and Tabasco and cook an additional 30 minutes or until flavors are well blended and soup has thickened slightly. Add salt and pepper to taste. The Tabasco sauce loses its heat when soup is reheated. Please taste the next day and add more Tabasco as needed.
